Low-Intervention, Organic. Completely handmade using qvevris - a technique where the fermentation and aging is done in clay vessels buried in the ground. Unfined, Unfiltered.

Lightly floral and spiced on nose with dried apricots, black tea, and ginger on the palate. Medium bodied, medium high tannins.

Gabriel is an Orthodox Christian monk who lived in the 6th-century monastery Shio-Mgvime for twenty-seven years. There, he tended crops, learned to make wine and cheese while becoming a blacksmith. He then returned to his childhood home and began making traditional, natural wine with the help of friends - Giorgi Tsirghvava and Mamuka Tsiklauri (from Do Re Mi). This wine is completely handmade using Georgian Qvevri. Unfined/Unfiltered. Only 177 cases were produced. Each label is filled out hand-written, you’ll know exactly what bottle of the collection you’re drinking. It’s one of those bottles you might want to save even after it’s empty.
